Lots of reasons:

We don't want to be anywhere near your Twitter password.
Some sites don't offer a system to let us grab your profile data.
Some people want to customize their shirt (i.e., commemorate their 1,000th follower or their 5,000th Tweet).
It's really hard to build a system that survives the impact when lots of Twitter users find out about it, and we wanted to make sure ours didn't crash.
We're rank amateurs and we wanted to get this off the ground ASAP.

Absolutely. After you click Preview My Shirt, click on the Shirt Options tab. You can change shirt types, shirt colors and more.

Social Shirt is the underdeveloped, immature brain child of Brent Ozar, a 35 year old database expert at Quest Software.
